Ingredients & Method-
One tablespoon + 1 teaspoon (20 ml) gelatin, three tablespoon cold water, 2 cups (500 ml) mango purée, at room temperature (about 4 mangoes), 3 egg whites and 1 cup (250 ml) 35% cream, whipped. For the topping, the papaya puree is then frozen and crushed in a blender along with plain ice cubes. Then the skimmed milk is dissolved in some water, added to it and again blended.
Hot water is used to mix with gelatin and sugar, then mango puree is stirred in. The whipping or double cream is beaten until soft to medium peak form.
Then the cream is gently folded into the mango puree. This is then poured into a mousse tin and chilled in fridge for at least 3 hours to set. For the mango glaze
The hot water, sugar and gelatin are mixed together. Then some mango pieces are placed on top of the mousse, and thenpoured in the liquid mixture. This is then chilled in the fridge to set.
